Adding new hooks to Prestashop isn't exactly something everybody can do, since it involves dealing with the database and knowing a lot of php.
The Ez Hook module will allow everybody, even non-techies, to add new hooks to their shops pretty easily. You'll only have to give the hook a name, a title, a description, and click add. Then, copy and paste a couple of code snippets generated by the module, and enjoy your new hooks.

Can you limit the hook to a category. I have a number of specifically named custom html modules and I have been trying to show them on specific category pages but it is not working using the "if $page_name == page name" tag and so I am wanting to know if I use this module can I limit the hooks to be loaded on a specific page or a category page along with it's sub-category pages
Yes, you can. You can place the generated code in the CategoryController.php, so that the hook only executes in category pages, and then, if you want to output the code, you paste the output code in the category.tpl page. of course, you will need further coding in your module if you want to target specific category IDs.

in Prestashop 1.5.3 are different codes used than Your module generate. Please test it and update Your module.
I just tested it and seems to be working for me. It's true the displayHeader function is deprecated in 1.5, but I'm willing to keep it for a while, till I decide to drop compatibility for 1.4.
